We control every aspect of our honey production, from the making of our own hives and frames with untreated wood, using only clean wax from our own hives and breeding our own queens.
From Flower to Jar, we can trace, check and verify that our products are of the highest quality, free of pollutant and chemicals.
All our batches are collected separately according to seasons and blossoms in the Troodos mountain range of Cyprus.
In order to preserve all the nutrients, its authentic flavour and its unique aromas we do not filter or heat our Honey.
Every single batch is sent for analysis for quality criteria’s and to ensure that its free of chemicals and pollutant.
Authentic Honey Quality Criteria
HMR content should be below 40mg.per.kg.
Sucrose content should not exceed 5%
Diastase activity should be higher than 8DN
Content of Non-water-soluble-substances should be below 0.1%
Chemicals and Pollutant should always be under 0%
Electrial conductivity should be below 0.8 ms/cm
Humidity should be below 20%
Glucose and Fructose content should be higher than 60%
Free acids should be below 50 meq/kg
